Apple Honey Butter

Oh my gosh! I love this recipe! It fits into my lifestyle of trying to eat whole unprocessed foods right now…I plan on spreading it on Whole Oat Pancakes, and using it in place of butter on breads and sandwiches. The fall spices of cloves, cinnamon and allspice are among those zingers that scream “AUTUMN” to me. And the kicker is…it makes a good sized recipe that will last for weeks!

Start out by pouring 3 cups of apple cider into a good-sized pot.

Simmer (turn heat down until it barely bubbles) for about 10 minutes and let the cider reduce down to intense apple flavor.


While that’s simmering, peel, core and chop up 2 pounds of apples.  I prefer those that lean towards a little tartness, like Honey Crisp.

Add them all to the cider in the pot.

Just imagine, super intense cider flavor married to cooked down super intense chunks of apple flavor.  That’s what we’re going for folks.

Pop the lid on your pot and simmer these for an hour.

This is just enough time for you to watch an episode of Merlin, Sherlock or Call the Midwife.

Yes, I’m on a BBC Netflix kick and loving it. (Just some suggestions if you like good, clean, WITTY awesome shows.)

After one hour, add in 1/2 cup of honey, 2 teaspoons of cinnamon and 1/2 teaspoon each of ground cloves and allspice. Then grate in 1/2 teaspoon of fresh ginger.

Mix all this up and then take an immersion blender and whiz it up smoothly.

If you don’t have an immersion blender just pour it all into a blender or food processor, keeping in mind that hot liquid might burst up at you so keep the hole in your blender covered up to avoid nasty burns.

True story, while baking this past Sunday, I took a baking pan out of the oven and nicked the side of my face with the edge, leaving me with the UGLIEST burn mark….sigh.

Put this back on the stove and continue to simmer it another 20 minutes or so until the color darkens and it thickens up.

Ingredients

  • 3 c. cider
  • 2 pounds apples, peeled,cored and choppe
  • 1/2 c. honey
  • 2 t. ground cinammon
  • 1/2 t. ground cloves
  • 1/2 t. ground allspice
  • 1 t. chopped ginger

Instructions

  1. Simmer cider on stove for 10 minutes to reduce.
  2. Add in apples and simmer, covered around one hour.
  3. Remove from heat.
  4. Add in honey and spices and stir.
  5. and add to blender or food processor and puree until smooth. Return to pot and cook on medium, stirring often until thickened, about minutes.
